Perfect Roast Chicken
This is my favorite way to roast a chicken. I roasted two whole chickens like this yesterday and served them to the company I had for lunch. I didn’t roast any veggies with them, but used the pan drippings and heavy cream to make some delectable gravy for mashed potatoes.
