Vincent Van GoghI’m thankful for my garden potatoes. Potatoes take very little work to grow, and the taste payoff is big. I had one of my garden potatoes baked for supper and I really enjoyed it. A bonus benefit from garden potatoes is that their skins are so tender that they don’t need to be peeled—ever. I don’t even peel them to make mashed potatoes and no one’s complained yet. In fact, they say they like their mashed potatoes better that way. So I thank God for providing potatoes for us, and the sun, rain, and soil to grow them.

I've started leaving the skins on potatoes in more and more dishes. I haven't tried making mashed potatoes with skins (though I've had garlic mashed potatoes in a restaurant with the skins on and it was good).
Do potatoes take much sun? I've got such a shady yard that I can't do as much vegetable gardening at this house. I do have an area on the side of the garage that I could plant in potatoes if they don't need a whole lot of sun.

No, they don't have to have a lot of sun. They do best with weather that's not too hot, so you'd want to grow them in the spring.
We LOVE our potatoes at Willow's Cottage but I've never tried growing any. Maybe a spring tutorial would be good for us.
