I love Shepherd's Pie! I used left over roast beef and I put it through my food processor to make it coarse. Then I use a little bit of onion, leftover gravy and I made new mashed potatoes because they spread better when they're hot. Then I top the meat. I don't put any veggies in mine, because the family doesn't like it that way, so I cook them on the side!
My boys will be very jealous that you have a Slap Chop in your house. I already have a chopper like that, a very expensive Pampered Chef one, and I still prefer to chop by hand.
The girls in my family are big shepherd's pie fans. The boys not so much. So we don't have it as often as I'd like, but when I do make it, it's usually with chopped up leftover roast beef.
Now that I read that article, I'm anticipating using mashed yams as the topping.
